'Rabdi' is a very famous sweet in Northern India prepared from reduced milk. It is popular because of its rich, creamy texture and unrivaled flavor. People think that preparing 'Rabdi' is a very tedious job, which to some extent is true, but here I have a simple microwave recipe to beat the prolonged traditional method.
There are 2 ways of preparing it:
1. The traditional way:
Take the milk in a thick bottomed pan/ kadai and keep heating it till it remains half. Now keep stirring continuously till it remains 1/4 and also you need to layer the malai/crusty cream on the sides of the pan/kadai. Be careful that it doesn't burn or stick to the bottom else the smell and taste would change. Now add sugar to it as per your taste and heat for 2 minutes with stirring in between.
Also, you can microwave it after the milk remains half by heating on gas. Take this thickened milk in a very large microwavable dish to avoid spilling on heating. Microwave it for 10-12 minutes till it converts to 'thick malai rabdi'. Now add sugar and microwave for the next 2 minutes.
'Rabdi' is all set to use. You can refrigerate it for better taste. Also, you could add cardamom powder and dry fruits as per your wish.
Preparation Time: 2 minutes
Cooking Time: 6-8 minutes
Take 1 and a half cup full cream milk powder and 1 cup milk. Mix them well and microwave (6-8 minutes) with stirring at every 1 minute, till you get the desired consistency. Don't forget to use a big microwavable bowl/dish to avoid spilling. At last add sugar and microwave for the next 1 minute. Refrigerate and top it with almonds, pistachios and cardamom powder. Rabdi is ready in just 10 minutes; isn't that easy??
This was always top on my fav sweets when I was in Delhi and Bengali market was a few minutes away and my sis and I indulged in a sweet a day, but we walked to and fro to BM and that burnt off the calories we would consume with these :) Yummy post, anjali!

Hi Anjali- The description and looks of your rabdi took me right to the mithai shop in the local bazaar back at home in India. You are right about the tedious making process but its such an awesome sweet that its well worth it, even better when made in the microwave at a fraction of the effort.
